Microwavable Carrot Cake
This is one of the easiest and fastest baking dishes you will ever make.For the baking ingredient I bought pre-baking item available in the market like Betty Crocker. The ingredients you need to add:
1. Vegetable Oil 1 cup
2. Water ½ cup
3. Egg 3 medium size
Now to start with the recipe, pour the pre-prepared flour in a mixing bowl. Add eggs to it, then vegetable oil followed by water. Blend all the ingredients together for 5 mins till it becomes a smooth paste. Now take a glass microwaveable wide open bowl and grease it with butter to prevent the cake from sticking while cooking. Add crushed peanuts, cashew nuts, almond and raisins for added flavor. Pour the mixture in the bowl. Then set the microwave to the highest level and set the timer from 5 to 7 mins and jut wait for the cake to be baked. Slowly the cake will start rising and become fluffy in appearanceJ. Once done use a fork or a tooth pick to check the cake is baked. Then take it out and cut it into pcs and can serve warm or else put it in the ref for 30 mins to cool down before serving.

Phad Thai with a Twist
This is the name of my new Thai recipe which I cooked at home in a very innovative style. To start with this recipe you need put together some of the ingredients and a packet of Thai rice noodles available in the market from the Simple Asia brand and oh!! it also comes with a Thai sauce to add to the cooked noodles.
So let’s kick off with the recipe. Ingredients required for 250 gm of noodles are:
1. One medium size red onion/white onion – finely chopped
2. Bell pepper – 1medium size
3. Sprout mongo – 15 gms or 2 tbsp
4. Peanuts finely chopped – 2 tbsp
5. Cilantro/coriander leaves for garnishing
6. Vegetable oil -2 tbsp
7. Dried chilies – 2 pcs
8. Bay leaves – 3 to 4 pcs
9. Boneless Chicken or Shrimp – 100 gms
First boil water in a pan, once the water is boiling add noodles and soak it for 5 minutes. Drain the water from the noodles and spread it in a plate and set aside. While soaking the noodles you can add 1 table sp of veg oil and salt in the water. That will keep the noodles loose and prevent from sticking to each other.
Place a pan in your gas oven and add oil to it. Add the dried chilies and bay leaves once the oil is hot and then the onions. Sauté the onion till light brown in color. Cook the shredded chicken. If you are cooking with shrimp, add it later while frying the noodles in the pan. Then add the crushed peanuts and bell pepper. Now, add the cooked noodles and pan fry it for a minute or so. Then add the packet sauce provided in the Noodle box. At the end add one scrambled egg as a topping and garnish with cilantro and chopped lemon grass for Thai flavor.
