Phad Thai with a Twist

This is the name of my new Thai recipe which I cooked at home in a very innovative style. To start with this recipe you need put together some of the ingredients and a packet of Thai rice noodles available in the market from the Simple Asia brand and oh!! it also comes with a Thai sauce to add to the cooked noodles.
So let’s kick off with the recipe. Ingredients required for 250 gm of noodles are:
1. One medium size red onion/white onion – finely chopped
2. Bell pepper – 1medium size
3. Sprout mongo – 15 gms or 2 tbsp
4. Peanuts finely chopped – 2 tbsp
5. Cilantro/coriander leaves for garnishing
6. Vegetable oil -2 tbsp
7. Dried chilies – 2 pcs
8. Bay leaves – 3 to 4 pcs
9. Boneless Chicken or Shrimp – 100 gms
First boil water in a pan, once the water is boiling add noodles and soak it for 5 minutes. Drain the water from the noodles and spread it in a plate and set aside. While soaking the noodles you can add 1 table sp of veg oil and salt in the water. That will keep the noodles loose and prevent from sticking to each other.
Place a pan in your gas oven and add oil to it. Add the dried chilies and bay leaves once the oil is hot and then the onions. Sauté the onion till light brown in color. Cook the shredded chicken. If you are cooking with shrimp, add it later while frying the noodles in the pan. Then add the crushed peanuts and bell pepper. Now, add the cooked noodles and pan fry it for a minute or so. Then add the packet sauce provided in the Noodle box. At the end add one scrambled egg as a topping and garnish with cilantro and chopped lemon grass for Thai flavor.
